Instructions
- Preheat your oven to 450°F (232°C).
- Place the rib roast on a rack in a roasting pan.
- Rub the olive oil over the roast.
- Mix the garlic, rosemary, thyme, salt, and pepper in a bowl.
- Rub the herb mixture over the roast evenly.
- Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 15-20 minutes before slicing.
