A simple and delicious roast made in a crockpot.
Ingredients

- 3–4 lbs beef roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
Instructions
- Season the roast with salt, pepper, and thyme.
- Place the roast in the crockpot.
- Add the chopped vegetables and minced garlic around the roast.
- Pour the beef broth over the roast and vegetables.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check the roast for tenderness before serving.
Notes
- For added flavor, marinate the roast overnight.
- Adjust cooking time based on the size of the roast.
- Leftovers can be stored in the refrigerator for up to 3 days.
