- 1 medium butternut squash, peeled and cubed
- 1 cup fresh cranberries
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey
- 1 tablespoon fresh thyme leaves
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine butternut squash, cranberries, olive oil, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes or until the squash is tender.
- Remove from oven and drizzle with honey.
- Add feta cheese and thyme, tossing gently.
- Serve warm.
Notes
- Feel free to adjust the amount of feta cheese to taste.
- You can substitute dried cranberries if fresh ones are not available.
