Description

Roasted butternut squash with cranberries and feta is a delicious and healthy side dish.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup fresh cranberries
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash, cranberries, olive oil, salt, and pepper.
  3. Spread the mixture on a baking sheet.
  4. Roast for 25-30 minutes or until the squash is tender.
  5. Remove from oven and drizzle with honey.
  6. Add feta cheese and thyme, tossing gently.
