  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season with salt, pepper, garlic powder, onion powder, and thyme.
  5. Stuff the cavity with lemon halves and fresh herbs.
  6. Place the chicken in a roasting pan.
  7. Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let it rest for 10 minutes before carving.
