Description

A simple and flavorful roasted red pepper pasta dish.


Ingredients

  • 8 oz pasta
  • 2 roasted red peppers
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. In a blender, combine roasted red peppers and garlic. Blend until smooth.
  3. In a skillet, heat olive oil over medium heat.
  4. Add the red pepper mixture and cook for 2 minutes.
  5. Stir in the heavy cream and Parmesan cheese. Mix well.
  6. Add cooked pasta to the skillet. Toss to coat.
  7. Season with salt and black pepper.
  8. Serve hot.
