A simple and flavorful roasted red pepper pasta dish.
Ingredients

- 8 oz pasta
- 2 roasted red peppers
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a blender, combine roasted red peppers and garlic. Blend until smooth.
- In a skillet, heat olive oil over medium heat.
- Add the red pepper mixture and cook for 2 minutes.
- Stir in the heavy cream and Parmesan cheese. Mix well.
- Add cooked pasta to the skillet. Toss to coat.
- Season with salt and black pepper.
- Serve hot.
Notes
- Use any pasta of your choice.
- For a vegan option, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
