- 1 cup roasted red peppers, chopped

Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat. Add spinach and cook until wilted.
- Mix spinach with roasted red peppers and mozzarella cheese.
- Cut a pocket in each chicken breast and stuff with the mixture.
- Season the chicken with garlic powder, salt, and pepper.
- Place stuffed chicken in a baking dish and bake for 25-30 minutes.
- Ensure chicken is cooked through before serving.
