A refreshing ice cream made with roasted strawberries, lime, and basil.
Ingredients

- 2 cups fresh strawberries, hulled
- 1 tablespoon olive oil
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 1 lime, zested
- 1 cup heavy cream
- 1 cup milk
- 1/2 cup sugar
- 1/4 cup fresh basil, chopped
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- Toss strawberries with olive oil and sugar in a bowl.
- Spread strawberries on a baking sheet and roast for 20 minutes.
- Let strawberries cool, then blend with lime juice and zest.
- In a separate bowl, mix cream, milk, remaining sugar, basil, and vanilla.
- Combine the strawberry mixture with the cream mixture.
- Chill the mixture in the refrigerator for 2 hours.
- Pour into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer to a container and freeze for at least 4 hours before serving.
Notes
- Use ripe strawberries for best flavor.
- Adjust sugar based on the sweetness of the strawberries.
- Fresh basil adds a unique flavor.
