Ingredients

- 1 cup chickpeas, drained and rinsed
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked quinoa
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chickpeas and vegetables with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes until vegetables are tender.
- In a serving bowl, add cooked quinoa.
- Top with roasted chickpeas and vegetables.
- Garnish with fresh parsley.
