Ingredients

  • 1 cup buttermilk

  • 1 tablespoon vanilla extract
  • 1 tablespoon purple food coloring
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, whisk together oil, buttermilk, eggs, vanilla, and food coloring.
  5. Combine the wet and dry ingredients until smooth.
  6. Divide the batter between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks.
  9. For the frosting, beat cream cheese and butter until creamy.
  10. Gradually add powdered sugar and mix until smooth, then add vanilla.
  11. Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the top and sides.
