- 2 cups crushed vanilla wafers
- 1 cup chopped nuts
- 1 cup powdered sugar
- 1/4 cup cocoa powder
- 1/2 cup dark rum
- 1/4 cup corn syrup
- 1 cup additional powdered sugar for coating
Instructions
- In a large bowl, combine crushed vanilla wafers, chopped nuts, powdered sugar, and cocoa powder.
- Add dark rum and corn syrup to the mixture.
- Mix until well combined.
- Form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in powdered sugar to coat.
- Place the rum balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 2 hours before serving.
Notes
- Store in an airtight container in the refrigerator.
- For a non-alcoholic version, use rum extract.
- These can be made ahead of time and kept for several days.
