- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat your grill to medium-high heat.
- Brush salmon fillets with olive oil and season with salt and pepper.
- In a bowl, combine mango, red bell pepper, red onion, lime juice, and cilantro to make the salsa.
- Grill the salmon for about 6-8 minutes per side, or until cooked through.
- Remove salmon from grill and top with mango salsa.
- Serve immediately.
