Decadent salted caramel cheesecake with a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup salted caramel sauce
- 1/4 teaspoon sea salt
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing on low speed after each addition until just incorporated.
- Mix in sour cream and salted caramel sauce until smooth. Pour filling over crust.
- Bake for 1 hour or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove from oven and refrigerate for at least 4 hours before serving.
Notes
- For a chocolate variation, add 1/2 cup cocoa powder to the cream cheese mixture.
- For a fruit topping, consider fresh berries or a fruit compote.
- Use a water bath for even baking and to prevent cracks.
