- 1 lb sausage
- 1 cup rice
- 2 cups chicken broth
- 1 cup bell pepper, chopped
- 1 onion, chopped
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the sausage over medium heat.
- Add chopped onion and bell pepper to the skillet and sauté until softened.
- Stir in the rice, chicken broth, diced tomatoes, garlic powder, paprika, salt, and pepper.
- Transfer the mixture to a casserole dish.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10-15 minutes until rice is cooked and liquid is absorbed.
Notes
- Feel free to add other vegetables like peas or corn.
- Use any type of sausage you prefer.
- This dish can be made ahead of time and reheated.
