Instructions

  1. Heat olive oil in a paella pan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add red bell pepper, cook for 3 minutes.
  4. Stir in Bomba rice, coating with oil.
  5. Pour in wine, cook until absorbed.
  6. Add seafood stock, saffron, and smoked paprika.
  7. Bring to a boil, then reduce to a simmer.
  8. Arrange shrimp, mussels, and squid on top.
  9. Sprinkle peas over the top.
  10. Do not stir; cook for 15-20 minutes until rice is tender and liquid is absorbed.
  11. Let sit for 5 minutes before serving.
