- 2 cups Bomba rice
- 4 cups seafood stock
- 1/2 cup dry white wine
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned
- 1 lb squid, cleaned and sliced
- 1/2 cup peas
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 teaspoon saffron threads
- 1 teaspoon smoked paprika
- Salt to taste
- Olive oil
Instructions
- Heat olive oil in a paella pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add red bell pepper, cook for 3 minutes.
- Stir in Bomba rice, coating with oil.
- Pour in wine, cook until absorbed.
- Add seafood stock, saffron, and smoked paprika.
- Bring to a boil, then reduce to a simmer.
- Arrange shrimp, mussels, and squid on top.
- Sprinkle peas over the top.
- Do not stir; cook for 15-20 minutes until rice is tender and liquid is absorbed.
- Let sit for 5 minutes before serving.
Notes
- Use fresh seafood for best flavor.
- Experiment with different seafood combinations.
- For added depth, try adding chorizo.
- Garnish with fresh parsley and lemon wedges.
