Description

A refreshing seafood salad with a mix of flavors and textures.


Ingredients

  • 200g shrimp, peeled and deveined
  • 200g crab meat
  • 100g scallops
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil.
  2. Add shrimp and scallops, cooking until shrimp are pink and scallops are opaque.
  3. Drain and rinse seafood under cold water.
  4. In a bowl, combine mixed greens, cherry tomatoes, red onion, and cucumber.
  5. Add the seafood on top of the salad mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately or chill in the refrigerator before serving.
