Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place chicken breasts on a sheet pan.
  3. Drizzle olive oil over the chicken and season with salt and pepper.
  4. Add cherry tomatoes around the chicken.
  5. Bake for 20 minutes.
  6. Remove from the oven and top each chicken breast with mozzarella.
  7. Return to oven and bake for an additional 10 minutes until cheese is melted.
  8. Drizzle with balsamic vinegar and sprinkle with fresh basil before serving.
