A simple and delicious sheet pan caprese chicken recipe with fresh ingredients.
Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella, sliced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place chicken breasts on a sheet pan.
- Drizzle olive oil over the chicken and season with salt and pepper.
- Add cherry tomatoes around the chicken.
- Bake for 20 minutes.
- Remove from the oven and top each chicken breast with mozzarella.
- Return to oven and bake for an additional 10 minutes until cheese is melted.
- Drizzle with balsamic vinegar and sprinkle with fresh basil before serving.

- Can substitute chicken thighs for more juiciness.
