Description

A simple and delicious sheet pan meal featuring garlic butter chicken and mixed vegetables.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix melted butter, garlic, thyme, salt, and pepper.
  3. Place chicken thighs on a sheet pan and brush with the garlic butter mixture.
  4. Toss mixed vegetables in olive oil and season with salt and pepper.
  5. Spread vegetables around the chicken on the sheet pan.
  6. Bake for 35-40 minutes or until chicken is cooked through and vegetables are tender.
