Ingredients

- 4 chicken breasts
- 2 cups bell peppers, sliced
- 1 cup red onion, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, oregano, salt, and pepper.
- Coat chicken breasts in the mixture.
- Place chicken on a sheet pan.
- Add vegetables around the chicken on the sheet pan.
- Drizzle remaining marinade over vegetables.
- Bake for 25-30 minutes or until chicken is cooked through.
- Let it rest for 5 minutes before serving.
Notes
- Use any seasonal vegetables you prefer.
- Marinate chicken for a few hours for more flavor.
- Leftovers can be stored in the fridge for up to 3 days.
