- 1/4 cup Dijon mustard

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, paprika, salt, and pepper.
- Coat the chicken thighs in the honey mustard mixture.
- Place the chicken on a sheet pan and arrange the mixed vegetables around it.
- Drizzle the remaining honey mustard mixture over the vegetables.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Serve hot and enjoy.
