- 1 lb ground beef
- 1 packet taco seasoning
- 12 corn tortillas
- 1 cup shredded cheese
- 1 can black beans, drained
- 1 cup diced tomatoes
- 1/2 cup sliced jalapenos
- 1/4 cup chopped cilantro
- Sour cream for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook ground beef until browned.
- Add taco seasoning and black beans. Stir well.
- Place tortillas on a baking sheet.
- Scoop the beef mixture onto each tortilla.
- Top with diced tomatoes, jalapenos, and cheese.
- Bake for 10-12 minutes until cheese is melted.
- Garnish with cilantro and serve with sour cream.
Notes
- You can add more toppings like avocado or lettuce.
- Use ground turkey for a lighter option.
- Store leftovers in the fridge for up to 3 days.
