- 2 cups Brussels sprouts, halved
- 3 cups carrots, peeled and chopped
- 2 cups potatoes, cubed
- 1 onion, quartered
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the vegetables with olive oil, garlic, thyme, rosemary, salt, and pepper.
- Arrange the turkey breast in the center of a large sheet pan.
- Surround the turkey with the seasoned vegetables.
- Roast in the preheated oven for about 1.5 hours or until the turkey reaches an internal temperature of 165°F (74°C).
- Let the turkey rest for 10-15 minutes before slicing.
- Serve the turkey with the roasted vegetables.
