Ingredients

- 1 cup long-grain rice
- 1 lb shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 tsp Cajun seasoning
- Salt to taste
- Pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat oil in a pan over medium heat.
- Sauté onion, bell pepper, celery, and garlic until soft.
- Add shrimp and cook until pink.
- Stir in rice, broth, and Cajun seasoning.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork and serve hot.

- Adjust seasoning to taste.
- Use fresh or frozen shrimp.
- Can add vegetables like peas or corn if desired.
