- 1 cup shrimp, peeled and deveined

- 2 eggs, beaten
- 3 green onions, chopped

- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add shrimp and cook until pink, about 2-3 minutes.
- Push shrimp to one side and scramble the eggs on the other side.
- Add mixed vegetables and stir-fry for about 2 minutes.
- Add cooked rice, soy sauce, and sesame oil; mix thoroughly.
- Season with salt and pepper.
- Stir in green onions before serving.
