Ingredients

- 4 cups of green beans, trimmed
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of cranberries
- 1/2 cup of chopped walnuts
- 2 cups of mashed potatoes
- 1/2 cup of milk
- 1/4 cup of butter
- 1/2 cup of sour cream
Instructions
- Preheat the oven to 400°F.
- Toss green beans with olive oil, garlic powder, salt, and pepper.
- Spread green beans on a baking sheet and roast for 15 minutes.
- In a pot, boil water and cook cranberries until they burst.
- Stir in walnuts and set aside.
- Prepare mashed potatoes by boiling potatoes until tender, then mashing with milk, butter, and sour cream.
- Serve green beans topped with cranberry-walnut mixture and mashed potatoes on the side.

- Adjust seasoning to taste.
- Use fresh or frozen green beans.
- Can make mashed potatoes ahead of time and reheat.
