Ingredients

- 3 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup lime juice
- 1/4 cup apple cider vinegar
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1–2 jalapeños, chopped (optional)
Instructions
- Place the beef chuck roast in the slow cooker.
- Add the chopped onion and minced garlic.
- In a bowl, mix lime juice, apple cider vinegar, chili powder, cumin, paprika, oregano, salt, and pepper.
- Pour the mixture over the beef.
- Add chopped jalapeños if using.
- Cover and cook on low for 8 hours or until beef is tender.
- Shred the beef with two forks and mix it with the juices.
- Serve in tacos, burritos, or over rice.
Notes
- For extra flavor, marinate the beef overnight.
- Adjust heat level with more or fewer jalapeños.
