Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp ground ginger
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 1 cup frozen peas
- Chopped cilantro for garnish
Instructions
- Place chicken, sweet potatoes, onion, and garlic in the slow cooker.
- In a bowl, mix coconut milk, curry powder, ginger, salt, and pepper.
- Pour the coconut milk mixture over the chicken and sweet potatoes.
- Add chicken broth and stir to combine.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add frozen peas.
- Serve hot, garnished with cilantro.
Notes
- Adjust the spice level by adding chili powder if desired.
- Serve with rice or naan for a complete meal.
- You can substitute chicken with chickpeas for a vegetarian option.
