Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1 cup frozen peas
  • Chopped cilantro for garnish

Instructions

  1. Place chicken, sweet potatoes, onion, and garlic in the slow cooker.
  2. In a bowl, mix coconut milk, curry powder, ginger, salt, and pepper.
  3. Pour the coconut milk mixture over the chicken and sweet potatoes.
  4. Add chicken broth and stir to combine.
  5. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  6. In the last 30 minutes, add frozen peas.
  7. Serve hot, garnished with cilantro.
