A comforting slow cooker creamy tortellini soup that is easy to prepare.
Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes (15 oz)
- 2 cups fresh spinach
- 1 package (9 oz) refrigerated tortellini
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add the sautéed onion and garlic to the slow cooker.
- Pour in vegetable broth and diced tomatoes.
- Cook on low for 4 hours.
- Add tortellini and spinach, then cook for an additional 30 minutes.
- Stir in heavy cream and season with salt and pepper before serving.
Notes
- Use any type of tortellini you prefer.
- Feel free to add other vegetables.
- Can be stored in the refrigerator for up to 3 days.
