Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (15 oz)
  • 2 cups fresh spinach
  • 1 package (9 oz) refrigerated tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan and sauté onion and garlic until soft.
  2. Add the sautéed onion and garlic to the slow cooker.
  3. Pour in vegetable broth and diced tomatoes.
  4. Cook on low for 4 hours.
  5. Add tortellini and spinach, then cook for an additional 30 minutes.
  6. Stir in heavy cream and season with salt and pepper before serving.
