Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Brown ground beef in a skillet over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Transfer mixture to slow cooker.
  4. Add black beans, corn, diced tomatoes, beef broth, and taco seasoning.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Before serving, stir in shredded cheese until melted.
  8. Season with salt and pepper to taste.
