A hearty and flavorful slow cooker Tex Mex taco soup.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 2 cups beef broth
- 1 packet taco seasoning
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Brown ground beef in a skillet over medium heat.
- Add onion and garlic, cook until softened.
- Transfer mixture to slow cooker.
- Add black beans, corn, diced tomatoes, beef broth, and taco seasoning.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir in shredded cheese until melted.
- Season with salt and pepper to taste.
