Ingredients

  • 4 cups Brussels sprouts, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups sweet potatoes, cubed
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups corn, fresh or frozen
  • 1/2 cup diced red bell pepper
  • 1 tablespoon butter

Instructions

  1. Preheat your smoker to 225°F.
  2. Toss Brussels sprouts with olive oil, salt, and pepper. Place them in the smoker for 1 hour.
  3. Mix sweet potatoes with maple syrup, cinnamon, and nutmeg. Add them to the smoker for 45 minutes.
  4. In a skillet, melt butter over medium heat. Add corn and bell pepper, sauté for 5 minutes.
  5. Combine all smoked items on a serving platter and enjoy.
