Crispy and flavorful smoky fried green tomatoes served with fresh salsa.
Ingredients

- 4 medium green tomatoes, sliced
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1 cup vegetable oil for frying
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
Instructions
- Slice the green tomatoes into 1/4 inch thick slices.
- In a bowl, mix cornmeal, flour, smoked paprika, salt, and pepper.
- Dip each tomato slice in the beaten eggs, then coat with the cornmeal mixture.
- Heat oil in a skillet over medium heat.
- Fry the tomato slices until golden brown on both sides, about 3-4 minutes per side.
- Remove from skillet and drain on paper towels.
- In a separate bowl, combine diced tomatoes, onion, cilantro, and lime juice to make the salsa.
- Serve the fried green tomatoes with fresh salsa on top.
Notes
- Use firm green tomatoes for best results.
- Adjust seasoning according to your taste.
- Fresh salsa can be made in advance.
