Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup vegetable oil for frying
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 lime, juiced

Instructions

  1. Slice the green tomatoes into 1/4 inch thick slices.
  2. In a bowl, mix cornmeal, flour, smoked paprika, salt, and pepper.
  3. Dip each tomato slice in the beaten eggs, then coat with the cornmeal mixture.
  4. Heat oil in a skillet over medium heat.
  5. Fry the tomato slices until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from skillet and drain on paper towels.
  7. In a separate bowl, combine diced tomatoes, onion, cilantro, and lime juice to make the salsa.
  8. Serve the fried green tomatoes with fresh salsa on top.
