  • 4 large eggs

  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat cream cheese until smooth.
  5. Add sugar and mix until well incorporated.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in vanilla extract and sour cream until smooth.
  8. Melt chocolate chips and fold into the cream cheese mixture.
  9. Pour the cheesecake batter over the crust in the springform pan.
  10. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  11. Remove from the oven and let it cool to room temperature.
  12. Top with mini marshmallows and use a kitchen torch to toast them lightly.
  13. Chill in the refrigerator for at least 4 hours before serving.
