- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat cream cheese until smooth.
- Add sugar and mix until well incorporated.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream until smooth.
- Melt chocolate chips and fold into the cream cheese mixture.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Remove from the oven and let it cool to room temperature.
- Top with mini marshmallows and use a kitchen torch to toast them lightly.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a deeper chocolate flavor, use dark chocolate chips.
- Consider adding a layer of chocolate ganache on top of the cheesecake before adding marshmallows.
- For a variation, incorporate peanut butter into the cheesecake mixture.
