Ingredients

- 200g soba noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 red bell pepper, sliced
- 4 green onions, chopped
- 100g edamame, shelled
- 2 tablespoons sesame seeds
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
Instructions
- Cook the soba noodles according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine the cucumber, carrot, red bell pepper, green onions, and edamame.
- Add the cooled soba noodles to the bowl.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey.
- Pour the dressing over the salad and toss to combine.
- Sprinkle with sesame seeds before serving.
