Ingredients

  • 100g edamame, shelled
  • 2 tablespoons sesame seeds

  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey

Instructions

  1. Cook the soba noodles according to package instructions.
  2. Drain and rinse under cold water.
  3. In a large bowl, combine the cucumber, carrot, red bell pepper, green onions, and edamame.
  4. Add the cooled soba noodles to the bowl.
  5. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey.
  6. Pour the dressing over the salad and toss to combine.
