A simple and hearty soup recipe made in a crockpot.
Ingredients

- 1 lb chicken breast, diced
- 4 cups chicken broth
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Place all ingredients in the crockpot.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf before serving.
- Serve hot and enjoy.
Notes
- Adjust seasoning to taste.
- Can add noodles or rice for a heartier soup.
- Store leftovers in the fridge for up to 3 days.
