Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread pecans on a baking sheet and toast for 10 minutes.
  3. In a saucepan, combine sugar, butter, and cream over medium heat.
  4. Stir until the mixture reaches a soft ball stage (about 240°F or 115°C).
  5. Remove from heat and stir in vanilla.
  6. Add toasted pecans and mix well.
  7. Drop spoonfuls of the mixture onto parchment paper.
  8. Let cool completely before serving.
