- 2 pounds of potatoes
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 4 hard-boiled eggs, chopped
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, then cool and peel.
- Cut the potatoes into bite-sized pieces.
- In a large bowl, combine mayonnaise and Dijon mustard.
- Add chopped celery, onion, eggs, and pickle relish.
- Gently fold in the potatoes.
- Season with salt and pepper.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For extra flavor, add chopped green onions.
- Use red or yellow potatoes for a different texture.
- This salad can be made a day in advance.
