- 1 cup buttermilk
- 1/4 cup honey
- 2 large eggs
- 1/4 cup melted butter
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk buttermilk, honey, eggs, and melted butter.
- Combine wet and dry ingredients until just mixed.
- Grease a mini muffin tin and fill each cup about 2/3 full.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
