Description

Southern style honey butter cornbread poppers are small, fluffy cornbread bites drizzled with honey butter.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 cup butter (for honey butter)
  • 1/4 cup honey (for honey butter)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, and melted butter.
  4. Combine wet and dry ingredients until just mixed.
  5. Grease a mini muffin tin and fill each cup with batter.
  6. Bake for 15-18 minutes or until golden brown.
  7. While baking, mix softened butter and honey for honey butter.
  8. Remove cornbread poppers from the oven and drizzle with honey butter.
