Description
Southern style honey butter cornbread poppers are small, fluffy cornbread bites drizzled with honey butter.
Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup honey
- 1/2 cup butter (for honey butter)
- 1/4 cup honey (for honey butter)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and melted butter.
- Combine wet and dry ingredients until just mixed.
- Grease a mini muffin tin and fill each cup with batter.
- Bake for 15-18 minutes or until golden brown.
- While baking, mix softened butter and honey for honey butter.
- Remove cornbread poppers from the oven and drizzle with honey butter.
Notes
- Serve warm for best flavor.
- Adjust sweetness by varying honey amount.
- Can add jalapeños for a spicy kick.
