Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add ground beef, cook until browned.
  4. Stir in sweet potatoes, chili powder, cumin, salt, and pepper.
  5. Cover and cook for 10-15 minutes, or until sweet potatoes are tender.
