Description

Ingredients

  • 400g spaghetti
  • 1kg fresh clams, scrubbed
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté until fragrant.
  3. Add clams and white wine to the skillet. Cover and cook until clams open, about 5-7 minutes.
  4. Remove clams from heat and discard any that did not open.
  5. Add cooked spaghetti to the skillet. Toss with clams and reserved pasta water as needed for consistency.
  6. Stir in parsley and season with salt and black pepper.
  7. Plate and serve immediately, garnished with additional parsley if desired.
