Description
A classic Italian dish featuring spaghetti tossed with fresh clams and a light garlic sauce.
Ingredients

- 400g spaghetti
- 1kg fresh clams, scrubbed
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh parsley, chopped
- 1/2 tsp red pepper flakes
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté until fragrant.
- Add clams and white wine to the skillet. Cover and cook until clams open, about 5-7 minutes.
- Remove clams from heat and discard any that did not open.
- Add cooked spaghetti to the skillet. Toss with clams and reserved pasta water as needed for consistency.
- Stir in parsley and season with salt and black pepper.
- Plate and serve immediately, garnished with additional parsley if desired.
Notes
- Use fresh clams for best flavor.
- Adjust garlic and red pepper flakes to taste.
- Pair with a crisp white wine.
