Description
A spatchcock turkey is a turkey that has been butterflied for faster cooking and even browning. Perfect for Thanksgiving.
Ingredients

- 1 whole turkey (12–14 lbs)
- 1/4 cup olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, zested and juiced
Instructions
- Preheat your oven to 450°F (232°C).
- Place the turkey breast-side down on a cutting board.
- Remove the backbone using kitchen shears.
- Flip the turkey over and press down on the breast to flatten.
- Rub olive oil all over the turkey.
- Season with salt, pepper, garlic powder, onion powder, rosemary, thyme, lemon zest, and juice.
- Place the turkey on a roasting pan.
- Roast in the oven for 1.5 to 2 hours until the internal temperature reaches 165°F (74°C).
- Let it rest for 20 minutes before carving.
Notes
- Use a meat thermometer for accurate cooking.
- Let the turkey come to room temperature before cooking.
- Brining the turkey beforehand can enhance flavor.
