Description

A spatchcock turkey is a turkey that has been butterflied for faster cooking and even browning. Perfect for Thanksgiving.


Ingredients

  • 1 whole turkey (1214 lbs)
  • 1/4 cup olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, zested and juiced

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place the turkey breast-side down on a cutting board.
  3. Remove the backbone using kitchen shears.
  4. Flip the turkey over and press down on the breast to flatten.
  5. Rub olive oil all over the turkey.
  6. Season with salt, pepper, garlic powder, onion powder, rosemary, thyme, lemon zest, and juice.
  7. Place the turkey on a roasting pan.
  8. Roast in the oven for 1.5 to 2 hours until the internal temperature reaches 165°F (74°C).
  9. Let it rest for 20 minutes before carving.

  • Let the turkey come to room temperature before cooking.
  • Brining the turkey beforehand can enhance flavor.
