- 2 cups dried black beans
- 6 cups vegetable broth
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 2 jalapeños, diced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt to taste
- 2 tablespoons olive oil
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Rinse and soak the black beans overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, bell pepper, and jalapeños. Sauté until softened.
- Stir in cumin, smoked paprika, and chili powder. Cook for 1 minute.
- Add soaked black beans and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 1 to 1.5 hours until beans are tender.
- Use an immersion blender to puree part of the soup for a creamy texture.
- Stir in lime juice and salt to taste.
- Serve hot, garnished with fresh cilantro.

- For a thicker soup, blend more beans.
