- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 4 cups chicken broth
- 1 cup buffalo sauce
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Stir in smoked paprika and cumin, cook for 1 minute.
- Add chicken breasts and sear on both sides for about 4 minutes.
- Pour in chicken broth and buffalo sauce, bring to a boil.
- Reduce heat and simmer for 20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Stir in heavy cream and cheddar cheese, cook until cheese is melted.
- Season with salt and pepper to taste.
- Garnish with green onions before serving.
