  • 1 can (14 oz) diced tomatoes
  • 23 tbsp chipotle in adobo sauce
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
  3. Add chopped onion and garlic to the skillet. Sauté until the onion is translucent.
  4. Stir in diced tomatoes and chipotle in adobo sauce. Let simmer for 5 minutes.
  5. Pour in heavy cream and mix well. Cook for another 2-3 minutes.
  6. Add the cooked pasta and shredded cheese to the skillet. Stir until combined.
  7. Season with salt and pepper. Garnish with fresh parsley before serving.
