A flavorful and spicy chicken chipotle pasta dish.
Ingredients

- 8 oz penne pasta
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2–3 tbsp chipotle in adobo sauce
- 1 cup heavy cream
- 1 cup shredded cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
- Add chopped onion and garlic to the skillet. Sauté until the onion is translucent.
- Stir in diced tomatoes and chipotle in adobo sauce. Let simmer for 5 minutes.
- Pour in heavy cream and mix well. Cook for another 2-3 minutes.
- Add the cooked pasta and shredded cheese to the skillet. Stir until combined.
- Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
- Adjust chipotle amount for desired spice level.
- Use gluten-free pasta for a gluten-free option.
- Leftovers can be stored in the refrigerator for up to 3 days.
