- 2 chicken breasts (about 1 pound)
- 3 tablespoons harissa paste
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large tortillas
- 1 cup cucumber, julienned
- 1/2 cup carrots, shredded
- 1/4 cup red cabbage, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- Fresh cilantro for garnish
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix harissa paste, olive oil, salt, and black pepper.
- Coat the chicken breasts in the marinade. Let them sit for 30 minutes.
- Grill the chicken for 6-7 minutes per side until fully cooked. Let it rest before slicing.
- In another bowl, combine cucumber, carrots, red cabbage, rice vinegar, honey, and sesame oil. Toss well.
- Warm the tortillas on the grill for about 30 seconds on each side.
- Layer sliced chicken and cucumber slaw onto each tortilla.
- Roll the tortillas tightly and slice in half. Garnish with cilantro.
