Ingredients
- Chicken thighs – 4 pieces
- Maple syrup – 1/4 cup
- Hot sauce – 2 tablespoons
- Garlic – 2 cloves, minced
- Salt – 1 teaspoon
- Pepper – 1/2 teaspoon
- Coconut milk – 1 cup
- Jasmine rice – 1 cup
- Water – 1 cup
- Cilantro – for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix maple syrup, hot sauce, minced garlic, salt, and pepper.
- Coat chicken thighs with the marinade.
- Place chicken in a baking dish and bake for 25-30 minutes.
- In a pot, combine jasmine rice, coconut milk, and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes until rice is cooked.
- Fluff rice with a fork and serve with spicy chicken.
- Garnish with cilantro.
