A flavorful and spicy red curry wonton soup that warms you up.
Ingredients

- 1 package wonton wrappers
- 1 cup ground pork
- 2 green onions, finely chopped
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 4 cups chicken broth
- 1 can coconut milk (13.5 oz)
- 2 tablespoons red curry paste
- 1 cup bok choy, chopped
- 1 red bell pepper, sliced
- Fresh cilantro for garnish
Instructions
- In a bowl, mix ground pork, green onions, ginger, soy sauce, and sesame oil.
- Place a small spoonful of the mixture in the center of each wonton wrapper.
- Moisten the edges of the wrapper with water and fold to seal.
- In a pot, combine chicken broth, coconut milk, and red curry paste. Bring to a simmer.
- Add the wontons to the pot and cook for 5-7 minutes.
- Add bok choy and red bell pepper. Cook for an additional 2-3 minutes.
- Serve hot and garnish with fresh cilantro.
Notes
- Use fresh ingredients for best flavor.
- Adjust spice level by adding more or less red curry paste.
- Store leftovers in the fridge for up to 3 days.
