Ingredients

  • 1 package wonton wrappers
  • 1 cup ground pork
  • 2 green onions, finely chopped
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 4 cups chicken broth
  • 1 can coconut milk (13.5 oz)
  • 2 tablespoons red curry paste
  • 1 cup bok choy, chopped
  • 1 red bell pepper, sliced
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix ground pork, green onions, ginger, soy sauce, and sesame oil.
  2. Place a small spoonful of the mixture in the center of each wonton wrapper.
  3. Moisten the edges of the wrapper with water and fold to seal.
  4. In a pot, combine chicken broth, coconut milk, and red curry paste. Bring to a simmer.
  5. Add the wontons to the pot and cook for 5-7 minutes.
  6. Add bok choy and red bell pepper. Cook for an additional 2-3 minutes.
  7. Serve hot and garnish with fresh cilantro.

  • Adjust spice level by adding more or less red curry paste.
