Ingredients

- 2 cups sushi rice
- 2.5 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 8 ounces sushi-grade tuna, diced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 avocado, sliced
- Sesame seeds for garnish
- Green onions, chopped for garnish
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a rice cooker. Cook according to rice cooker instructions.
- In a small bowl, mix rice vinegar, sugar, and salt. Heat until dissolved.
- Once rice is cooked, transfer to a bowl and mix in vinegar mixture. Let cool.
- In another bowl, combine diced tuna, mayonnaise, and sriracha.
- Once rice is cool, form into small squares or rectangles.
- Heat oil in a pan and fry rice pieces until golden and crispy on both sides.
- Top each crispy rice piece with spicy tuna mixture and avocado slices.
- Garnish with sesame seeds and green onions.
