- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped

Instructions
- Preheat your oven to 450°F (230°C).
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast bone-side down in a roasting pan.
- Roast for 20 minutes at 450°F.
- Reduce the temperature to 325°F (165°C) and continue cooking for 1.5 to 2 hours, or until the internal temperature reaches 130°F for medium-rare.
- Remove the roast from the oven and let it rest for 20-30 minutes before carving.
