- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, salt, and pepper.
- In a bowl, mix garlic, rosemary, and thyme. Rub this mixture over the roast.
- Place the roast bone-side down in a roasting pan.
- Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let it rest for 15-20 minutes before slicing.

- Resting the meat allows juices to redistribute.
