- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, pureed
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 325°F (165°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, blend cream cheese, 1 cup sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in pureed strawberries and mix until combined.
- Pour the cheesecake mixture over the crust.
- Swirl in strawberry jam for added flavor.
- Bake for 30-35 minutes or until set.
- Cool, then refrigerate for at least 2 hours before serving.
Notes
- Use ripe strawberries for best flavor.
- Chill bars overnight for a firmer texture.
- Top with fresh strawberries before serving.
